Rockin' Tortilla Soup (in only 5 minutes!)


Did you know that the very first Trader Joe's was in Pasadena? Well, lucky for everyone else, TJ's has expanded throughout the country and with good reason. I love Trader Joes! Today I've got a super easy, super quick recipe for you. Using Trader Joe's ingredients, this recipe requires no preparation and can be made within 5-10 minutes. Perfect for this chilly and busy time of year!

For those of you who don't have a TJ's, you can sub out with your favorite ingreds from your local store. While I don't normally like to eat canned food items, this recipe is just too delicious and too easy. Just make sure to rinse off the items before adding them to your soup and always buy organic!


Ingredients:
1 Box Organic Free Range Chicken Broth
1 Jar Trader Joe's Chunky Salsa
2 Cans Organic Black Beans
1 Cup Trader Joe's Frozen Roasted Organic Corn
1 Can of Premium White Chicken or 2 Boiled Organic Chicken Breasts (preferred)

Garnish:
Avocado
Cilantro
Mexican Blend Cheese (optional)
Corn Tortilla Chips (optional)


To Make:
Combine all items in a large pot over medium heat. Stir well. When soup has reached desired temperature, ladle into a bowl and garnish with avocado, cilantro and cheese (tortilla's optional). 

How's that for easy? If you'd like to make this dish even more healthy, you can place all ingredients with raw black beans, raw corn and uncooked chicken into a crock pot and let it cook for the day...
